Steps
1. Heat olive oil in a small pot over medium heat.
2. Add chopped onions and sauté until translucent.
3. Stir in the spices: cumin, cinnamon, ginger, and turmeric, and cook for 1 minute until fragrant.
4. Add the chicken thigh, season with salt and pepper, and brown on all sides.
5. Pour in the chicken broth and add the dried apricots.
6. Cover and simmer on low heat for about 20 minutes, or until the chicken is cooked through.
7. Garnish with fresh cilantro before serving.
