Steps
1. Rinse the quinoa under cold water.
2. In a kettle, combine quinoa, vegetable broth, bell peppers, zucchini, cherry tomatoes, spinach, garlic powder, salt, and pepper.
3. Bring the mixture to a boil, then reduce heat to low and let it simmer for 15-20 minutes or until quinoa is cooked and vegetables are tender.
4. Fluff with a fork before serving.
