
Steps
- Heat the olive oil in a pan over medium-high heat.
- Add onions and potatoes to the pan and sauté them until they are tender.
- Add tomato puree and mix until combined.
- Spread butter on one side of each bread slice.
- Place onion and potato mixture on top of one slice.
- Place the second slice butter side up on top of the onion and potato mixture.
- Heat a nonstick pan over medium-high heat.
- Place the sandwich onto the heated pan and press down lightly.
- Cook for 3-4 minutes and then flip over to cook for a further 3-4 minutes.
- Slice the sandwich into pieces and enjoy as a snack!

- • 1 teaspoon of tomato puree
