1. Heat the olive oil in a pan over medium-high heat. 2. Add onions and potatoes to the pan and sauté them until they are tender. 3. Add tomato puree and mix until combined. 4. Spread butter on one side of each bread slice. 5. Place onion and potato mixture on top of one slice. 6. Place the second slice butter side up on top of the onion and potato mixture. 7. Heat a nonstick pan over medium-high heat. 8. Place the sandwich onto the heated pan and press down lightly. 9. Cook for 3-4 minutes and then flip over to cook for a further 3-4 minutes. 10. Slice the sandwich into pieces and enjoy as a snack!
