Steps

2. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. While the quinoa cooks, preheat your grill or a skillet over medium heat.
4. Season the chicken breast with olive oil, paprika, salt, and pepper.
5. Grill the chicken for about 6-7 minutes on each side until cooked through. Let it rest before slicing.
6. In a bowl, combine the cooked quinoa, cherry tomatoes, black beans, and lime juice.
7. Top the quinoa mixture with sliced chicken and avocado.
8. Garnish with fresh cilantro before serving.
