Steps
1. Cook the rice according to package instructions.
2. In a skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
3. Add the cubed tofu to the skillet and sauté until golden brown, about 3-4 minutes.
4. Stir in the diced potato, chopped tomato, and sliced zucchini. Cook until the potato is tender, about 10 minutes. Season with soy sauce, salt, and pepper.
5. In a separate pan, fry the egg sunny-side up.
6. Once everything is cooked, serve the chicken and tofu mixture over the rice, top with the fried egg, and garnish with fresh herbs.
