Steps
1. Rinse the quinoa under cold water and drain.
2. In a small pot, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and liquid is absorbed.
3. In a separate pan, heat the olive oil over medium heat. Add the corn and black beans, sautéing for about 5 minutes until heated through. Season with salt and pepper.
4. Once the quinoa is cooked, fluff it with a fork and transfer it to a bowl.
5. Top the quinoa with the corn and black bean mixture, diced avocado, and drizzle with lime juice.
6. Garnish with fresh cilantro if desired and serve warm.
