Steps

1. Rinse the quinoa under cold water. 2. In a small pot, bring water or chicken broth to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes until water is absorbed. 3. While quinoa cooks, season the chicken breast with salt and pepper. 4. Heat olive oil in a skillet over medium heat. 5. Cook chicken for 5-6 minutes on each side until golden and cooked through. 6. In the last 2 minutes, spoon jelly over the chicken, allowing it to melt and glaze the meat. 7. Fluff cooked quinoa with a fork and stir in chopped parsley. 8.
