Steps
1. Preheat oven to 375°F (190°C).
2. Cut the top off the bell pepper and remove seeds and membrane.
3. In a bowl, mix quinoa, black beans, corn, cumin, paprika, salt, and pepper.
4. Stuff the bell pepper with the quinoa mixture.
5. Place the stuffed pepper in a baking dish, cover with foil, and bake for 30-35 minutes.
6. If desired, remove foil, sprinkle with shredded cheese, and bake for an additional 5 minutes until cheese is melted.
7. Serve hot and enjoy!
