Spanish Rice and Veggies

A flavorful plant-based main dish that combines the traditional flavors of Spanish cooking

Steps

1. In a medium saucepan, heat the olive oil over medium-high heat. add the garlic and onion and sauté until fragrant and the onion is translucent, about 3 minutes. 2. Add the potatoes, and sauté for another 3 minutes. 3. Add the rice and tomato paste, and stir until the tomato paste is fully incorporated. 4. Add 2 cups of water, stir, reduce heat to low, cover and simmer for 25 minutes or until the rice is cooked. 5. Salt and pepper to taste and serve hot.
