Steps
1. In a small pot, cook the rolled oats in water according to package instructions until they are creamy.
2. In a separate pan, heat olive oil over medium heat. Crack the egg into the pan and season with salt, pepper, turmeric, and cumin. Cook to your desired doneness (sunny side up or scrambled).
3. Toast the slices of whole grain bread until golden brown.
4. Spread the cooked oatmeal onto one slice of toast.
5. Layer the sliced tomatoes on top of the oatmeal.
6. Place the cooked egg on top of the tomatoes.
7. Top with fresh coriander leaves if desired, and place the second slice of toast on top.
8. Cut the sandwich in half and serve warm.
