Steps
1. Heat the oil in a medium-sized pot.
2. Add the beef to the pot and sauté until lightly browned, about 8 minutes.
3. Add the cucumbers, garlic, ginger and tomatoes to the pot and sauté for 4 minutes.
4. Add 1 cup of water to the pot, bring to a boil, then reduce heat to low, cover and simmer for 20 minutes.
5. Serve the stew warm with some basmati rice or couscous.
