Spicy Black Bean and Vegetable Stir-Fry

A flavorful and nutritious stir-fry made with black beans, fresh vegetables, and a spicy sauce.

Steps

  1. Rinse the black beans and set aside.
  2. Heat the vegetable oil in a pan over medium heat.
  3. Add the garlic and ginger to the pan and sauté for 1 minute.
  4. Add the mixed vegetables to the pan and stir-fry for 3-4 minutes, until they are tender-crisp.
  5. Add the black beans to the pan and cook for an additional 2 minutes.
  6. In a small bowl, whisk together the soy sauce, sriracha sauce, honey, salt, and black pepper.
  7. Pour the sauce over the black beans and vegetables and stir to coat everything evenly.
  8. Cook for another 2 minutes, until the sauce thickens slightly.
  9. Remove from heat and serve hot.
