Steps
1. Heat the olive oil in a non-stick skillet or wok over medium- high heat.
2. Once hot, add the chicken cubes and garlic and season with salt and pepper. Cook for 5-6 minutes, stirring occasionally, until the chicken is cooked through
3. Add the diced red bell pepper and cook for another 3-4 minutes, until softened.
4. Pour in the hot sauce and soy sauce and stir. Cook for 1-2 minutes.
5. Taste and adjust the seasonings to your taste.
6. Turn off the heat and add the diced scallions. Taste and adjust for seasoning one last time.
7. Serve hot with your favorite side dishes.
