Steps
1. Rinse the jasmine rice under cold water until the water runs clear. Cook according to package instructions.
2. In a skillet, heat the vegetable oil over medium-high heat.
3. Add the sliced onions and sauté until translucent, about 2-3 minutes.
4. Add the diced chicken to the skillet, seasoning with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
5. Stir in the chopped tomatoes and soy sauce, cooking for another 2-3 minutes until tomatoes soften.
6. Add chili paste, adjusting to your spice preference, and mix well.
7. Serve the stir-fry over a bed of rice, garnishing with fresh cilantro if desired.
