Steps
1. Heat olive oil in a skillet over medium heat.
2. Add chopped red onion and sauté for 2 minutes until softened.
3. Add corn, black beans, chili powder, cumin, salt, and pepper. Cook for 3-4 minutes, stirring occasionally.
4. Remove mixture from skillet and set aside.
5. Place tortilla in the same skillet on low heat.
6. Sprinkle half the cheese on one half of the tortilla.
7. Spoon the corn and black bean mixture over the cheese, then top with remaining cheese.
8. Fold the tortilla over and cook for 2-3 minutes on each side until golden and cheese is melted.
9. Remove from skillet, cut in half, and serve with salsa and sour cream if desired.
