Spicy Corn and Black Bean Quesadilla

Steps

1. Heat olive oil in a small skillet over medium heat. 2. Add minced garlic and chopped red onion; sauté until fragrant, about 2 minutes. 3. Stir in corn kernels, black beans, chili powder, salt, and pepper; cook for 3-4 minutes until warmed through. 4. Remove mixture from skillet and set aside. 5. Place the tortilla in the skillet over medium heat. 6. Sprinkle half of the shredded cheese evenly over the tortilla. 7. Spread the corn and black bean mixture over the cheese. 8. Top with the remaining cheese and cover with another tortilla if desired, or fold the tortilla in half. 9. Cook until the bottom tortilla is golden and cheese starts to melt, about 3-4 minutes. 10. Carefully flip and cook the other side until golden and cheese is fully melted, another 3-4 minutes. 11. Remove from heat and let rest for a minute before slicing. 12. Serve with sour cream and salsa if desired.
