Steps

1. Preheat your oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove seeds and membranes. 3. In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until translucent. 4. Add corn, black beans, tomato, chili powder, smoked paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally. 5. Stuff the bell pepper with the corn and bean mixture. 6. Place stuffed pepper upright in a baking dish and sprinkle cheese on top if using. 7. Bake in the oven for 20-25 minutes until the pepper is tender and cheese is melted. 8. Garnish with fresh cilantro and serve warm.
