Steps
1. Preheat your oven to 375°F (190°C).
2. Clean the mushrooms and remove the stems carefully, setting them aside.
3. In a pan, heat the oil over medium heat. Add the chopped onions and sauté until translucent.
4. Add the chopped mushroom stems, green chili, ginger-garlic paste, red chili powder, cumin powder, and salt. Cook for 2-3 minutes until the mixture is fragrant and well combined.
5. Remove from heat and stir in the fresh coriander, breadcrumbs, and cheese (if using).
6. Stuff each mushroom cap with the filling mixture, pressing down slightly to pack it in.
7. Arrange the stuffed mushrooms on a baking tray and bake in the preheated oven for about 15 minutes or until golden brown.
8. Serve hot as an appetizer, garnished with extra coriander if desired.
