1. Preheat oven to 375F. 2. In a medium-sized bowl, combine potatoes and olive oil. 3. Add garlic powder, oregano, salt, and pepper. Mix together until potatoes are evenly coated. 4. Spread potatoes in the bottom of a baking dish or pie plate. 5. Top with cooked spinach. 6. Bake in preheated oven for 20 minutes, or until potatoes are fork-tender and lightly browned. 7. Serve warm and enjoy!
