Steps
1. Cook quinoa according to package instructions and let it cool.
2. Wash the cucumber and cut it in half lengthwise. Scoop out the seeds carefully to create hollow 'boats'.
3. In a bowl, mix the cooked quinoa, diced cherry tomatoes, crumbled feta, parsley, mint, lemon juice, olive oil, salt, and pepper.
4. Spoon the quinoa mixture generously into each cucumber half.
5. Serve immediately or chilled for a refreshing main dish.
