Summer Quinoa Salad with Citrus Vinaigrette

Steps

Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water, and bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Fluff with a fork and let cool. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, bell pepper, corn, avocado, and cilantro. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss gently to combine. Adjust seasoning as needed. Serve immediately or chill in the refrigerator for an hour before serving for enhanced flavors.
