Steps
1. Rinse quinoa under cold water.
2. In a small pot, bring water to a boil, add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
3. Fluff quinoa with a fork and let cool slightly.
4. In a bowl, combine quinoa, orange segments, cucumber, mint, and walnuts.
5. Drizzle olive oil over the salad and season with salt and pepper.
6. Toss gently to mix all ingredients.
7. Serve immediately or chilled.
