Steps
1. In a large bowl, combine the diced apple and cucumber.
2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, and honey (or maple syrup) until well blended.
3. Pour the dressing over the apple and cucumber mixture and toss gently to coat.
4. Add chopped cilantro or mint, and season with salt and pepper to taste.
