Steps

1. Heat the oil in a large skillet over medium-high heat. 2. Add onions and peppers and cook for about 3-5 minutes until softened. 3. Add diced turkey, cumin, salt and pepper and cook for another 5 minutes. 4. Remove the pan from the heat and transfer the cooked mixture into a smaller bowl. 5. Place a tortilla on a plate and spread with sour cream. 6. Arrange the cooked turkey mixture on the tortilla and top with the cheese. 7. Heat the skillet again, add the tortilla with the filling and cook for about 1 minute each side or until it turns golden. 8. Remove it from the heat and serve.
