Steps

1. Preheat the oven to 220°C. 2. Cut the puff pastry into squares and line a muffin tin. 3. In a saucepan, whisk together almond milk, cornstarch, sugar, and vanilla until smooth. 4. Heat the mixture over medium heat until thickened. 5. Pour the custard into the pastry-lined tin. 6. Bake for 15-20 minutes until the pastry is golden. 7. Let cool, then dust with cinnamon before serving.
