Steps
- Soak the rice paper in warm water for about 10-15 seconds until soft, then lay it flat on a cutting board.
- In the center of the rice paper, layer the shredded carrots, cucumber, bean sprouts, and chopped cilantro.
- Sprinkle the crushed peanuts, fried shallots, and chili flakes on top.
- In a small bowl, mix the lime juice, fish sauce, and sugar until well combined. Drizzle over the filling.
- Carefully roll the rice paper, folding the sides in first, then rolling from the bottom up to enclose the filling.
- Slice the roll in half and serve with extra lime juice on the side, if desired.

- 1/4 cup shredded carrots
- 1/4 cup cucumber, julienned
- 1/4 cup bean sprouts
- 1/4 cup chopped cilantro
- 1 tbsp crushed peanuts
- 1 tbsp fried shallots
- 1 tsp chili flakes (optional)
- 1 tbsp lime juice
- 1 tbsp fish sauce (or soy sauce for a vegetarian option)
- 1 tsp sugar
