Steps
1. In a pot, bring 2 cups of water to a boil and add the quinoa and stir, and let it cook on medium heat for 10 minutes.
2. In a skillet, heat the olive oil over medium flame and add the onion, cumin, coriander, and salt, and cook for 5 minutes.
3. Add the minced garlic and cook for another 3 minutes.
4. Add the cooked quinoa to the skillet, stirring it together with the onion and spices.
5. Add the fresh parsley and coriander and stir for 2 minutes.
6. Add the roasted nuts and stir until everything is combined.
7. Take off the heat and serve.
