Steps
1. Heat up the vegetable oil in a medium saucepan over medium high heat.
2. Once the oil is hot, add the onion and sauté until they are softened, about 2-3 minutes.
3. Add in the chicken and cook until it is lightly browned, about 4-5 minutes.
4. Add the rice and combine everything together.
5. Add 2 cups of water and season with salt and pepper.
6. Lower the heat to low and simmer until the rice is cooked, about 15-20 minutes.
