Catalan-Style Cod

This dish is a homage to the typical Catalan way of preparing cod, featuring a luscious blend of tomatoes, peppers, and olives, infused with the fragrant aroma of garlic and olive oil. A heartwarming dish that encapsulates the essence of Catalan cuisine.

Steps

1. Heat olive oil in a skillet over medium heat. 2. Add the onion and garlic, sautéing until they are translucent. 3. Mix in the red and yellow bell peppers, and cook until they are slightly softened. 4. Stir in the chopped tomatoes and smoked paprika, cooking until the mixture becomes saucy. 5. Place the cod fillet in the skillet, spooning some of the vegetable mixture over the fish. 6. Cover and simmer for about 10-12 minutes or until the cod is cooked through. 7. Add the green olives and cook for another 2 minutes. 8. Season with salt and pepper, and garnish with fresh parsley before serving.
