Steps
1. In a pot, sauté the diced onion and minced garlic until fragrant.
2. Add the dried lentils, curry powder, turmeric, cumin, paprika, salt, and pepper. Stir well.
3. Pour in the coconut milk and enough water to cover the lentils. Bring to a boil.
4. Reduce heat, cover, and let simmer for 20-25 minutes or until lentils are cooked through.
5. Adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
