Steps
1. Heat olive oil in a skillet over medium heat.
2. Season the chicken breast with salt and pepper, then add it to the skillet. Cook for about 5-7 minutes on each side until browned and cooked through. Remove and set aside.
3. In the same skillet, add the diced apple and grated carrot, sautéing for 2-3 minutes until softened.
4. Pour in the beer and honey, stirring to combine. Bring the mixture to a simmer and let it reduce for about 5 minutes.
5. Return the chicken to the skillet, spooning the glaze over it. Cook for an additional 2-3 minutes until heated through.
6. Serve the chicken topped with the apple and carrot glaze, garnished with fresh thyme if desired.
