Steps
1. In a pan, heat vegetable oil over medium heat. Add garlic and ginger, sauté until fragrant.
2. Add tofu cubes and cook until slightly browned.
3. Stir in sliced bell peppers and onions, cook until vegetables are tender.
4. Pour in coconut milk, soy sauce, curry powder, salt, and pepper. Simmer for 5 minutes.
5. Serve the coconut curry tofu stir-fry over cooked rice.
