Steps
1. Heat olive oil in a skillet over medium heat.
2. Add minced garlic and sauté for 1 minute until fragrant.
3. Add fresh spinach and cook, stirring, until wilted (about 2-3 minutes).
4. Season spinach with salt, black pepper, and lemon juice. Remove from heat and set aside.
5. Bring a small pot of water to a gentle simmer and add a splash of vinegar (optional).
6. Crack egg into a small bowl, then gently slide it into the simmering water.
7. Poach egg for 3-4 minutes until the white is set but yolk remains runny.
8. Use a slotted spoon to remove the egg and place on top of the sautéed spinach.
9. Serve immediately.
