Steps

1. Preheat oven to 375F. 2. Beat the egg in a shallow bowl. 3. In a separate bowl, mix together the breadcrumbs, Parmesan cheese, and salt and pepper. 4. Dip the eggplant slices in the egg and then in the breadcrumb mixture, coating them evenly. 5. Heat the olive oil in a skillet over medium heat. 6. Place the eggplant slices in the skillet and cook for about 3 minutes each side until golden brown. 7. Using a baking dish, layer the eggplant slices and tomato sauce. 8. Sprinkle with the chopped basil and Parmesan cheese. 9. Place the baking dish in the preheated oven and bake for 20 minutes. 10. Serve the Eggplant Parmesan hot!
