Steps
1. Preheat the grill to medium-high heat.
2. In a small bowl, combine the olive oil, minced garlic, dried rosemary, salt, and pepper. Rub the mixture all over the lamb chops.
3. Place the lamb chops on the preheated grill and cook for about 4-5 minutes per side, or until desired doneness.
4. While the lamb chops are grilling, prepare the mint sauce. In a blender or food processor, combine the fresh mint leaves, Greek yogurt, lemon juice, honey, and a pinch of salt. Blend until smooth.
5. Remove the lamb chops from the grill and let them rest for a few minutes.
6. Serve the grilled lamb chops with the mint sauce on the side.
