Steps

1. Preheat oven to 400°F (200°C). 2. Toss diced potatoes with half the olive oil, minced garlic, salt, and pepper. Spread on a baking tray and roast for 25 minutes, turning halfway. 3. Meanwhile, mix rosemary, thyme, salt, and pepper. Rub this herb mixture onto both sides of the lamb chops. 4. Heat remaining olive oil in a skillet over medium-high heat. 5. Sear lamb chops for 3-4 minutes on each side until golden brown and cooked to desired doneness. 6. Remove lamb chops from skillet and let rest for 5 minutes. 7. Serve lamb chops with garlic roasted potatoes and a squeeze of lemon if desired.
