Lemon Herb Roasted Chicken

Steps

1. Preheat the oven to 425°F (220°C). 2. Rinse the chicken and pat dry with paper towels. 3. In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper. 4. Rub the herb mixture all over the chicken, including under the skin. 5. Place the sliced lemons inside the chicken cavity. 6. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C). 7. Remove the chicken from the oven and let it rest for 10 minutes before carving. 8. Serve the lemon herb roasted chicken with your favorite sides.
