Steps
1. Preheat the oven to 400°F (200°C).
2. Wash and dice the potatoes into bite-sized cubes.
3. In a bowl, toss the potatoes with olive oil, minced garlic, rosemary, thyme, salt, black pepper, and paprika.
4. Spread the potatoes evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for 25-30 minutes, flipping halfway through, until potatoes are golden and crispy.
6. Remove from oven and garnish with fresh parsley before serving.
