Steps
1. Preheat oven to 180°C (350°F).
2. In a small bowl, mix olive oil, minced garlic, rosemary, lemon juice, salt, and pepper.
3. Rub the rabbit leg thoroughly with the herb mixture.
4. Place the rabbit leg in a baking dish and surround with sliced carrot and cubed potato.
5. Roast in the oven for 40-45 minutes until the meat is tender and cooked through.
6. Remove from oven, let rest for 5 minutes before serving.
7. Serve warm with roasted vegetables on the side.
