
Steps
- Rinse the quinoa under cold water.
- In a saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent.
- Add the rinsed quinoa to the saucepan and stir to coat it with the oil.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low and cover the saucepan.
- Simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and stir in the fresh herbs. Season with salt and pepper to taste.
- Serve hot as a side dish.
