Herbed Quinoa Pilaf

A nutritious and flavorful side dish made with quinoa and a blend of fresh herbs.

Steps

1. Rinse the quinoa under cold water. 2. In a saucepan, heat the olive oil over medium heat. Add the onion and garlic, and sauté until translucent. 3. Add the rinsed quinoa to the saucepan and stir to coat it with the oil. 4. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and cover the saucepan. 5. Simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. 6. Remove from heat and let it sit, covered, for 5 minutes. 7. Fluff the quinoa with a fork and stir in the fresh herbs. Season with salt and pepper to taste. 8. Serve hot as a side dish.
