Steps
1. Heat the olive oil in a medium pot over medium-high heat.
2. Add the onion and sauté until fragrant and transparent.
3. Add the rice and stir to coat in the oil.
4. Lower the heat to medium and add the carrot, corn, cheese and jelly.
5. Pour in the vegetable broth and coffee.
6. Simmer for about 15 minutes, stirring occasionally, until the liquid is absorbed and the rice is cooked.
7. Add salt and pepper to taste.
8. Serve and enjoy!
