Steps
1. Preheat oven to 375F. Heat oil in a medium-sized skillet over medium heat.
2. Add onion and bell pepper to skillet and cook for 3 minutes. Add garlic and spinach, stirring until spinach is wilted.
3. In a separate bowl, whisk together egg, Parmesan, Italian herbs and a pinch of salt and pepper.
4. Add egg mixture to skillet and stir to combine. Sprinkle with desired amount of shredded cheese.
5. Pour mixture into a greased 9-inch pie dish and bake for 25 minutes, or until center is set.
6. Let quiche cool and serve!
