Mediterranean Stuffed Bell Peppers

A delicious Arab-inspired vegan main dish featuring flavorful stuffed bell peppers with a Mediterranean twist.

Steps

1. Preheat the oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds. 3. In a bowl, mix cooked quinoa, chickpeas, diced tomatoes, parsley, cumin, paprika, salt, and pepper. 4. Stuff the bell pepper with the quinoa mixture. 5. Drizzle with olive oil. 6. Bake for 25-30 minutes until the pepper is tender. 7. Serve hot and enjoy!
