Steps

2. Slice the top off the bell pepper and remove the seeds.
3. In a bowl, mix the cooked quinoa, chickpeas, tomatoes, feta cheese, oregano, salt, and pepper.
4. Stuff the bell pepper with the quinoa mixture.
5. Place the stuffed pepper on a baking tray and bake for 25-30 minutes, until the pepper is tender.
