Steps
1. Rinse the quinoa under cold water.
2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until the quinoa is fluffy.
3. While the quinoa cooks, chop the vegetables and mix the olive oil, lemon juice, salt, and pepper in a bowl.
4. Toast the mixed nuts in a dry pan over medium heat for 3-4 minutes until golden.
5. Once the quinoa is ready, fluff it with a fork and mix in the vegetables and dressing.
6. Top with the toasted nuts and garnish with fresh herbs before serving.
