Steps
1. Season the chicken breast with salt and pepper.
2. Heat olive oil in a skillet over medium heat and cook chicken until golden and cooked through, about 6-7 minutes per side.
3. In a small bowl, mix orange juice, zest, honey, and soy sauce to make the glaze.
4. Pour the glaze into the skillet and cook for 2 minutes, spooning the sauce over the chicken until thickened.
5. Remove chicken and let rest.
6. In a bowl, combine mixed greens, fennel slices, and orange segments. Drizzle with a little olive oil and season with salt.
7. Slice chicken and serve over the salad, sprinkle almonds on top if using.
