Steps

2. Rinse the quinoa under cold water and cook it in vegetable broth according to package instructions, typically about 15 minutes.
3. While the quinoa cooks, place the sliced carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until tender and slightly caramelized.
4. In a small bowl, whisk together tahini, lemon juice, salt, and pepper to make the dressing.
5. Once the quinoa is cooked, fluff it with a fork and place it in a bowl.
6. Top the quinoa with the roasted carrots and drizzle with the lemon-tahini dressing. Garnish with fresh parsley.
