Steps
1. Preheat oven to 375°F (190°C).
2. Season the chicken thigh with salt and pepper on both sides.
3. Heat olive oil in an oven-safe skillet over medium-high heat.
4. Add chicken thigh, skin side down, and sear until golden brown, about 4 minutes.
5. Flip the chicken and cook for another 2 minutes.
6. In a small bowl, mix the jam, soy sauce, and minced garlic.
7. Brush the jam mixture generously over the chicken thigh.
8. Transfer the skillet to the preheated oven and bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
9. Remove from oven and let rest for 5 minutes.
10. Garnish with fresh thyme if desired and serve.
