Steps
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix the jelly, soy sauce, garlic powder, salt, and pepper until well combined.
3. Heat olive oil in an oven-safe skillet over medium heat.
4. Season the chicken thigh with salt and pepper, then place it in the skillet skin-side down.
5. Sear the chicken for about 5 minutes until the skin is golden brown.
6. Flip the chicken and pour the jelly mixture over it.
7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through.
8. Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs if desired.
