Steps
1. Peel and wash the potatoes. Cut them into small cubes, cover them with water in a pot, and bring to a boil. Simmer until fork-tender.
2. Heat a grill or grill pan to medium-high heat. Brush the salmon with olive oil and season both sides with chipotle pepper. Grill for 4 minutes per side, until cooked through.
3. Mash the potatoes and add in the lime juice and avocado. Season to taste.
